Bring a taste of Gabon into your own home with some of the local cuisine. Below are some recipes that we've compiled for you to enjoy. Be sure to check back every so often, since we will be updating them as we can.
Samosas
Filling:
- 500g (about 1lb) ground beef
- 1 onion
- 2 cloves garlic
- Chili to taste - depends on just how hot you like it. The hotter, the better!
- 1 teaspoon ground Tumeric
- 1 teaspoon ground Corriander
- 2 teaspoons fresh ginger
- 1/4 cup chopped mint
- Juice of 1 lemon
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Heat the oil in a frying pan, add the onion and garlic, mix in the spices and seasoning and fry until soft. Add the beef, stirring until cooked. Remove from heat and stir in the mint and lemon juice.
Pastry:
You don't have to make your own... You can buy some at the store. If you decide to buy it, be sure to get Filo Pastry.
If you want to make it yourself, this recipe will make 24 samosas;
- 225 grams (about 1/2 lb) plain flour
- 2 teaspoons salt
- 2 tablespoons vegetable oil
- 1/3 cup warm water
Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough. Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.
Divide the pastry into 12 equal pieces. Roll each piece into a ball and roll out into a circle of 15 cm (or 6 inches). Divide this circle into two equal pieces with a knife.
Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.
Fill the cases with a tablespoon of the beef filling and press the two dampened edges together to seal the top of the cone.
Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel.
